An oven that is well off temperature is usually a failing sensor or a tired element rather than a control board, and the difference in cost is considerable. Replacing the board first is the expensive way to find that out.
On gas ranges the igniter is the most common failure. A weak igniter still glows but no longer draws enough current to open the gas valve, so the oven lights slowly or not at all — and a glowing igniter misleads people into thinking it is fine.
We calibrate against an independent thermometer rather than the display. A dial that reads 350 while the cavity sits at 315 is a repair that has not finished.
